Cranberry Almond Broccoli Salad

More often than not, broccoli salad is drowning in a thick dressing with 1/2 pound of bacon mixed in, making it more about the dressing and bacon than about the actual broccoli. This recipe uses Greek yogurt to keep the calories in check. We opted for a natural, uncured bacon (a bit less of it) and lower-sugar dried cranberries to pack a subtle punch of tart. And, perhaps the best part about this salad is that the longer it sits, the better it gets.  Enjoy!

Serves 8 (serving size: about 1/2 cup)

1/4c. Chopped, Red Onion
1/2c. Plain Greek Yogurt
1 tbsp Vinegar, cider
1 tbsp Honey
1/4 teaspoon, Salt
1/4 tsp, Black Pepper – Ground
4c Broccoli Florets
1/3c. Slivered almonds
1/3c. Cranberries Reduced Sugar Dried
4 skillet cooked slices (18 g), Uncured Bacon

How to Make It:
Step 1
Soak red onion in cold water for 5 minutes; drain.

Step 2
Combine mayonnaise and next 5 ingredients, stirring well with a whisk. Stir in red onion, broccoli, and remaining ingredients. Cover and chill 1 hour before serving.
